Château d'Oupia, Pays d'Hérault Les Hérétiques (2021)

I am a sucker for Minervois and this is just such a lovely everyday red. It drinks like it should cost more, so I feel like I am getting a deal when I sip this one. Sit back and enjoy, it won’t be hard to find something that pairs well with this one.

Details:

A blend of Carignan & Syrah. The Carignan vines average 40 years in age, with some of them being over 100 years old. The fruit is sustainably farmed and harvested partly by hand and partly by machine. Half of the Carignan is vinified traditionally--destemmed and fermented in a used barrel and macerated with skins for 30 days--and half as whole clusters. Those wines are then blended with the Syrah and aged further.
