Ever heard of Pinot Auxerrois? We hadn’t, either. It turns out, genetically speaking, Pinot Auxerrois isn’t a Pinot at all! You may find it listed as simply Auxerrois. This unique grape makes for unique winemaking. Its bitter skins require light pressing to avoid imparting those notes, however the end result is a delightfully dry and crisp sipper with hints of peach & orange. Amazing with cheese!
