Musings From The Kitchen: Week of March 17th
Making a soup feels a lot like making a magic potion–a pinch of this, a dash of that, a remnant of some animal, vegetable, herb or fungus–and so there is good reason why we call ourselves the kitchen witches. Modern day alchemists with chef knives! With winter being so long and cold, soup is such a staple comfort food. Nutritious, hot and variable in its textures and flavors, a bowl of soup is always just what the doctor ordered. Here at the Genny we have over 20 different kinds we rotate through. This season we have made OVER 500 gallons of soup!!! Can you guess which soup was the most popular?
It is a tie! The New England Clam Chowder and Chicken Pozole were neck and neck for the most slurped soup of the year.
Even though hot soup season winds down at the end of April, we are going to try and have our freezers stocked up with quarts of the greatest hits to be available all year round. Even in those warmer months!
